We have an API builder in Stratusphere UX, but I would love to see something similar where I can easily customize building a report, and having dynamic fields that I could request specific values such as application name if the report pertained such a value.

  The API Builder is there to help other applications pull data from Stratusphere. In a release later this year you will be able to use the API to schedule a report. This will be done in the "Detailed Views" of the Web UI. So basically, you will create a view in the "Detailed Views" TAB and then press a button to save/schedule it as a report. This does not exactly meet your requirements of a dynamic field of application name so we will review this with the dev team as a feature request.
